Pesto Pasta
Pasta, roasted butternut squash, red onion and buttered leeks, tossed in a dairy free/nut free basil and spinach pesto and topped with goat cheese.
Serves 3-4.
Toss in a pan over medium heat until creamy and heated through or microwave, stirring often. Add a small amount of water if needed, be careful not to overcook.
